Flour-free Pancakes


All you need is 2 eggs and a banana, seriously! Some say it can't actually be called a pancake if there's no flour or milk but I don't know what else to call them. 

They're my favourite breakfast and it only takes about 10 minutes.

1. Whip up the eggs in a bowl.
2. Mash up the banana and mix it together with the eggs.
3. Heat up a non-stick frying pan with a small square of butter.
4. Pour the batter into the pan according to how big you want your pancake to be. 
5. It will spread out quite quickly, so once the eggs start to thicken a bit, use a spatula to push the batter into a circular shape. You may have to keep doing this until they cook up a bit.
6. Once the pancake is in shape, fry for 3-5 minutes on one side and then flip. 
7. When you're happy with the golden brown-ness, simply remove the heat and serve!

They taste incredible - I love them with a bit of honey, condensed milk, greek yoghurt and a selection of berries. Of course any topping would go great - golden syrup, jam... anything you fancy!

Since there's no flour, they are incredibly light and fluffy but still have a very pleasant consistency. Let me know if you try them out!

So, I realise this is all very wishful thinking but a lot of these beauties will be perfect for the summer, with the camera at the top of my list so that I can snapshot memories over the holidays. As for The Great Gatsby, it was one of the texts I studied for English literature and it's safe to say I fell in love with the story, but my current copy is tragically illegible from annotations, so I'm in need of a new one. Also I saw the movie and it was phenomenal. 
My birthday is 5th June and pretty close to the end of my GCSE's so maybe some of these will be celebratory rewards - here's to hoping!

This idea came to me in the spur of the movement, as my GCSE's are drawing to a close and the summer approaches. I thought there is so much time for me to discover new things, within the beautiful city that I live in, and the world as a whole, and I want to start expressing my ideas and passions.

The city is my favourite place - the bright lights, the views, the culture, the endless experiences. So this blog will represent me - just a small fragment of a bustling city, its wonders and the dreamers within it.
